I love almost all sweets, but I definitely love cheesecake. These cheesecake bites are absolutely perfect for any occasion like Birthdays, or holidays. Their simple to throw in the freezer and pull out whenever you’re ready for them and who doesn’t love being able to have more than one dessert? Two or three? Their bite sized which makes it easy to serve, as well as easy to eat with little to no mess.
This recipe is just like the big round cheesecakes, but instead the recipe is transformed into making it possible to make little bites for easy eating. This recipe is wonderful if you have young children also- it keeps the mess down and makes the dessert or snack limited with allowing them to choose which pieces they want (Kid’s love this!).
The best part of it all? These Cheesecake Bites will quickly disappear when you bring them out- don’t forget to grab a few before the party to keep to the side (or you want get any!). These are guaranteed to get recipe requested, so be sure you’re ready to share with others.
I prefer to use this Silicone 12-Cup Mini Muffin Pan. If you are baking for a party or event, I’m going to guess you want the dessert to look pretty. This Silicone Pan helps the cheesecake bites, muffins, or mini quiches keep their form and pop out of the pan with little to no hassle. I like to use a 12-cup pan to be able to control my baking process before too many get over or under cooked. Read further reviews and you’ll find this is a popular item!
Freezer recommendation: If you choose to freeze these, pull them out within 30 minutes of the party starting and they’ll be ready at the start of the party. I have frozen these bites up to a month long and they still turned out just as delicious (I have yet to test longer, but if I do I’ll update you all). You can even include the whipped cream prior to freezing or after; whichever you find easier!
Note: My husband does not like whipped cream so I tend to leave some of the bites whip cream free for others who also are not a fan. You still get the delicious raspberry cheesecake bite.
White Chocolate Raspberry Cheesecakes Bites
For the Crust:
- 1½ cups Oreo cookie crumbs, cream centers removed (about 22-23 finely crushed cookies)
- 6 TB salted butter, melted
For the Custard:
- Half bag (6 oz) pure white chocolate chips
- ¼ cup half and half
- 1½ (12oz total) blocks whole cream cheese, softened to almost melted
- ¼ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
For the Raspberry Sauce:
- 5 oz frozen or fresh raspberries
- 1 TB granulated sugar
- 1½ tsp cornstarch dissolved in 3 TB water
